Vanilla Oatmeal Cookies
with Greek Style Yoghurt

Method
Step 1
Preheat oven to 175 degrees Celsius.
Step 2
In a large mixing bowl, add and mix sifted flour, baking powder, baking soda, nutmeg, cinnamon and salt.
Step 3
In another mixing bowl, add banana, egg, oil, brown sugar, yoghurt and vanilla and whisk to combine.
Step 4
Next, add the banana mix to the flour bowl and stir until combined. Then fold in oats followed by the raisins.
Step 5
Line a large baking tray with baking paper. Grab a palm sized handful and roll into a ball. Place on the tray and flatten slightly. Repeat until all the dough is used. Chill in fridge for an hour.
Step 6
Bake in oven for 12 minutes or until cookies are golden brown. Leave cookies to cool for 10 minutes then transfer to wire rack. Eat straight away or store in an airtight container.
